Spiced apple desserts have always been a fall favorite of mine, and there’s no better way to enjoy them than in an einkorn crisp! This tart, sweet, and spiced dessert is wonderfully warming, especially when served with a scoop of vanilla ice cream. With just a few simple whole food ingredients, we’ll whip up this easy apple crisp for you to share with your best buddies. Get ready to savour the flavours of the season!
Why Whole Grain Crisp is the Best
Whole grain flour adds a deep nuttiness to your crumble and has a number of health benefits. It is rich in vitamins and minerals which are usually lost in commercially processed grains. As stated in the name, whole-grain flour contains the whole grain including the bran, germ, and endosperm. These parts of the grain provide fibre and enzymes that contribute to a robust microbiome and aid digestion. Sourcing whole-grain flour from a mill also means you’re typically getting a product that is free of preservatives or additives, offering a more wholesome ingredient for your recipes. Not to mention, working with whole-grains is fun! Each grain offers a different flavour profile, making a whole new product with each grain you experiment with!
What is Einkorn?
Einkorn is an ancient grain and one of the earliest cultivated forms of wheat. It is rich in protein, vitamins, and minerals compared to modern wheat varieties. Einkorn produces a light flour that has a slightly nutty and sweet flavour, making it an excellent choice for various baked goods.
Its unique gluten structure is often easier to digest for some people, although it still contains gluten. Additionally, einkorn is more resilient in cultivation, thriving in poorer soils and harsher climates, making it a sustainable option even though it’s the most expensive grain I’ve seen on the market.
What is an Ancient Grain?
An ancient grain refers to a variety of grain that has remained largely unchanged over thousands of years. Other examples include, emmer, einkorn, kamut, quinoa, teff, and amaranth. These grains are prized for their lack of modification and hybridization, preserving their original nutritional properties and characteristics.
Where To Source Einkorn Flour
Einkorn is one of the more difficult flours to source. If you’re living in a city, you can mostly likely find a bakery or fancy grocery store that sells fresh-milled einkorn flour. If you’re living in the country and you can source whole grains, you may want to consider milling your own einkorn flour. You can start without making a large investment by using a powerful coffee grinder or blender that you already own. A step up would be purchasing a KitchenAid grain mill attachment.

What You’ll Need
Materials
- Medium sized mixing bowl for making the crumble
- Measuring cups and spoons
- A 8″x 8″ baking dish
- A wooden spoon or your hands
Ingredients
Sugar: I use brown sugar in this recipe for deeper flavour and moisture content but you can use whichever sugar you have on had. Avoid artificial or sugar-free products.
Einkorn Flour: I’ll be using einkorn flour in this recipe but you can use whichever whole-grain flour interests you. Because this recipe doesn’t require any kind of rise, the different characteristics of the grains won’t have much of an impact on the final product.
Oats: I use sprouted rolled oats for this recipe but you can use any rolled oat. Avoid quick oats and steel cut oats.
Salt: I use good ol’ pink Himalayan sea salt but any salt will do for this recipe.
Nutmeg: I use ground nutmeg for this recipe but I’m sure grating fresh nutmeg would take this crisp to another level.
Cinnamon: Ground cinnamon is perfect the way it is.
Ginger: Dried and ground ginger is my preference but you can use fresh and grated if you love ginger!
Butter: Room temperature butter makes the crumble easier to form.
Chopped Apple: I used Granny Smith apples for this recipe but you can use any apple you have on hand. I’m sure there is a difference between how different apples bake but I say an apples an apple, they’ll all be good. Maybe the crispier the apple, the better it will bake.
How to Make Spiced Apple Einkorn Crisp
- Preheat oven to 350F and grease your baking dish.
- Make the crumble:
- Add sugar, einkorn flour, salt, cinnamon, nutmeg, oats and butter to a medium sized mixing bowl.
- Mix together with your hands until a crumble is formed and set aside.
- Make the spiced apple mixture:
- Put your chopped apples into a bowl.
- Add a splash of vanilla and lemon juice.
- Add einkorn flour, sugar, nutmeg, cinnamon, ginger, and salt to your apples and mix with a wooden spoon until evenly distributed.
- Add the spiced apples to your baking dish and top with the crumble. Spread around until evenly distributed.
- Bake at 350F for 30-45 minutes or until the crisp is golden.
- Remove from the oven and allow to cool slightly before serving.
- Serve warm with vanilla ice cream or yogurt and enjoy!

- 1/2 cup Brown Sugar 100g
- 3/4 cup Einkorn Flour 100g
- 1/3 cup Butter 75g
- 1 Cup Rolled Oats 100g
- 1/4 tsp Salt
- 1/4 tsp Nutmeg
- 1/4 tsp Cinnamon
Spiced Apple Mix:
- 4-5 Apples
- 1/4 cup Brown Sugar 50g
- 2 Tbsp Einkorn Flour
- 1/4 tsp Salt
- 1/4 tsp Nutmeg
- 1/4 tsp Cinnamon
- 1/4 tsp Ginger
Instructions
- Preheat oven to 350℉ and grease your 9×9" baking dish.
Make the crumble:
- Add sugar, einkorn flour, salt, cinnamon, nutmeg, oats and butter to a medium sized mixing bowl.
- Mix together with your hands until a crumble is formed and set aside.
Make the spiced apple mixture:
- Put your chopped apples into a bowl.
- Add a splash of vanilla and lemon juice.
- Add einkorn flour, sugar, nutmeg, cinnamon, ginger, and salt to your apples and mix with a wooden spoon until evenly distributed.
