Spiced apple desserts have always been a fall favourite of mine, and there’s no better way to enjoy them than in an einkorn crisp! This tart, sweet, and spiced dessert is wonderfully warming, especially when served with a large scoop of vanilla ice cream. With just a few simple whole food ingredients, we’ll whip up this easy apple crisp for you to share with your best buddies. Get ready to savour the flavours of the season!

Recipe Tips

Prepare Ahead: Assemble this crisp ahead of time and store covered in the fridge or freezer. Bake from frozen by adding about 30 minutes to cook time. Cover with foil if the crisp topping is getting too dark!

Experiment with Additions: Classic apple is always a winner but sometimes it’s fun to add a handful of cranberries, blueberries, or even rhubarb for an apple rhubarb crisp.

Squeeze the Crisp: Maybe this is my preference but I like a chunky, buttery, crisp topping rather than a sandy one. Giving the butter a good squeeze into the dry ingredients gives you more of a structure to the crumbles.

What is Einkorn?

Einkorn is the “original” wheat—an ancient, un-hybridized grain that was a staple grain for thousands of years. It’s a total powerhouse, packed with more protein and minerals than anything you’ll find in a standard grocery store aisle.

I love it because it produces a light, golden flour with a naturally nutty, sweet flavour that makes everything from sourdough to pie crust taste special.

It’s gaining so much popularity lately because it’s the least messed-with grain on the market. If you’re looking for something that’s easy on the gut (thanks to its simpler gluten structure) but still big on flavour and nutrition, Einkorn is your guy.

Where To Source Einkorn Flour

Einkorn is one of the more difficult flours to source. If you’re living in a city, you can mostly likely find a bakery or fancy grocery store that sells fresh-milled einkorn flour. If you’re living in the country and you can source whole grains, you may want to consider milling your own einkorn flour. You can start without making a large investment by using a powerful coffee grinder or blender that you already own. A step up would be purchasing a KitchenAid grain mill attachment.

What You’ll Need For Einkorn Apple Crisp

Materials

Ingredients

  • Sugar: I use brown sugar in this recipe for deeper flavour and moisture content but you can use whichever sugar you have on had. Avoid artificial or sugar-free products.
  • Einkorn Flour: I’ll be using einkorn flour in this recipe but you can use whichever whole-grain flour interests you. Because this recipe doesn’t require any kind of rise, the different characteristics of the grains won’t have much of an impact on the final product.
  • Oats: I use sprouted rolled oats for this recipe but you can use any rolled oat. Avoid quick oats and steel cut oats.
  • Salt: I use good ol’ pink Himalayan sea salt but any salt will do for this recipe.
  • Nutmeg: I use ground nutmeg for this recipe but I’m sure grating fresh nutmeg would take this crisp to another level.
  • Cinnamon: Ground cinnamon is perfect the way it is.
  • Ginger: Dried and ground ginger is my preference but you can use fresh and grated if you love ginger!
  • Vanilla Extract: Always.
  • Lemon Juice: To keep apples from browning and to balance the sweetness.
  • Butter: Cubed and slightly colder than room temperature is perfect.
  • Chopped Apple: I used Granny Smith apples for this recipe but you can use any apple you have on hand. I’m sure there is a difference between how different apples bake but I say an apples an apple, they’ll all be good. Maybe the crispier the apple, the better it will bake.

Step-by-Step Instructions

STEP 1: Preheat your oven to 350°F and lightly grease your baking dish with butter or coconut oil.

STEP 2: In a medium mixing bowl, combine the sugar, einkorn flour, salt, cinnamon, nutmeg, and oats. Add the cubed butter and use your hands to work it into the dry ingredients until a pebble-like crumble forms. Set aside.

STEP 3: In a separate bowl, toss your chopped apples with a splash of vanilla and lemon juice. Add the einkorn flour, sugar, nutmeg, cinnamon, ginger, and salt, tossing until every slice is evenly coated.

STEP 4: Transfer the seasoned apples into your prepared dish and top generously with the einkorn crumble, spreading it right to the edges.

STEP 5: Bake for 30–45 minutes, or until the fruit is bubbling and the topping has turned a beautiful golden brown.

STEP 6: Let the crisp sit for a few minutes to allow the juices to thicken. Serve warm with a scoop of vanilla ice cream, a dollop of yogurt, or a generous splash of heavy cream.

Crumble

  • 2/3 cup sugar 125g
  • 1 cup einkorn flour 125g
  • 1/2 cup butter 115g
  • 1¼ cups rolled oats 125g
  • 1/2 tsp salt
  • 1/2 tsp nutmeg
  • 1/2 tsp cinnamon

Apple Mixture

  • 5-6 large apples diced
  • 3 tbsp einkorn flour
  • 1/4 cup sugar
  • 1 tsp cinnamon
  • ¼ tsp ground nutmeg
  • ¼ tsp ground ginger
  • ¼ tsp salt
  • ½ tsp vanilla extract
  • juice of half a lemon

Instructions 

  1. Preheat your oven to 350°F and lightly grease your baking dish with butter or coconut oil.
  2. In a medium mixing bowl, combine the sugar, einkorn flour, salt, cinnamon, nutmeg, and oats. Add the cubed butter and use your hands to work it into the dry ingredients until a pebble-like crumble forms. Set aside.

  4. Transfer the spiced apples into your prepared baking dish. Top generously with the crumble mixture, spreading it to the edges. Bake for 30–45 minutes, or until the fruit is bubbling and the topping has turned a beautiful golden brown.
  5. Remove from the oven and let it sit for a few minutes—this allows the juices to thicken. Serve warm with a scoop of vanilla ice cream, a dollop of yogurt, or even a splash of heavy cream.
