Apple Rhubarb Whole-Grain Crumble Bars

Authorbronwyn
These apple and rhubarb whole-grain crumble bars are a great snack to have on hand. They are full of fibre, healthy fats, and fruit! You can do almost any fruit combination for this recipe but the sweetness of the apple and tartness of the rhubarb seem to be a perfect match.

Ingredients

Apple Rhubarb Mixture

  • 2 medium/large sized apples 400g
  • 2 Tbsp all-purpose flour 30g
  • 2 Tbsp sugar 30g
  • 2 tsp lemon juice
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 tsp cinnamon
  • 1 cup chopped rhubarb 100g

Crust & Crumble

  • 3/4 cup all-purpose flour 100g
  • 3/4 cup whole-grain flour 100g
  • 1/2 cup rolled oats 80g
  • 1/2 cup sugar 100g
  • 1/2 tsp salt
  • 3/4 cup cold butter 180g

Instructions

  1. Preheat your oven to 350F.
  2. Chop your apples in cubes removing the core and the stem. Place them in a medium sized bowl.
  3. Add your chopped rhubarb to the bowl as well.
  4. To your apples and rhubarb, add sugar, white flour, vanilla, lemon juice, cinnamon, nutmeg and salt. Mix together until the fruit is all coated.
  5. Make the crumble: Add your whole-grain flour, white flour, oats, sugar, salt, cinnamon and nutmeg to another medium-sized mixing bowl.
  6. Add cold butter to this bowl of dry ingredients and mix with your hand until a crumble is formed. Set aside.
  7. Grease and flour your 8" x 8" baking dish or line it with parchment paper for easier removal.
  8. Add about 2/3 of your crumble mixture to the base of the dish. Spread out evenly and press down to form a bottom crust.
  9. With the remaining 1/3 of the crumble mixture, add a little more flour and mix in to make smaller crumble pieces.
  10. Add your fruit mixture to the crust.
  11. Top the fruit with the remaining crumble mixture. Spread out evenly on top.
  12. Bake at 350F for 55-60 minutes until golden and crumble is crumbly.
  13. Let cool completely before slicing.

Notes

You can do a full whole-grain flour crumble topping if you'd like. I added a little all-purpose flour just to lighten it up a bit.
This recipe is high in fat so it needs to be cooled down completely before slicing or it will fall apart on you. If you don't mind that, then serve warm!
