Date Filling
- 2½ cups Pitted Medjool Dates 400g
- 1 tbsp Orange Juice optional
- 1/2 tsp Baking Soda
- 1 tsp Vanilla Extract
Oat Crust and Crumble
- 150 g Whole Wheat Flour
- 125 g Sugar
- 175 g Oats
- 1 tsp Salt
- 170 g Butter
- 1 tbsp Orange Zest optional
Preheat Oven: Preheat your oven to 350°F (175°C). Line an 8x8" baking pan with parchment paper.
Make the Filling: In a small saucepan, combine dates, orange juice, and baking soda. Cover with water. Simmer over low heat, stirring occasionally, until dates break down into a thick paste (5–10 minutes). Remove from heat. Stir in a pinch of salt and a splash of vanilla. Set aside to cool.
Make the Crumble: In a food processor, combine flour, oats, sugar, and salt. Pulse to mix. Add cubed butter and pulse until the mixture forms a coarse, crumbly texture. Not too sandy, not too doughy.
Assemble: Press half the crumble into the bottom of the prepared pan. Spread the cooled date mixture evenly on top. Sprinkle the remaining crumble over the filling and press gently to set.
Bake: Bake for 45-55 minutes, or until the top is golden brown. Let cool completely before slicing into squares.
