Spiced apple desserts have always been a fall favourite of mine, and there’s no better way to enjoy them than in an einkorn crisp! This tart, sweet, and spiced dessert is wonderfully warming, especially when served with a large scoop of vanilla ice cream. With just a few simple whole food ingredients, we’ll whip up this easy apple crisp for you to share with your best buddies. Get ready to savour the flavours of the season!

What is Einkorn?

Einkorn is an ancient grain and one of the earliest cultivated forms of wheat. It is rich in protein, vitamins, and minerals compared to modern wheat varieties. Einkorn produces a light flour that has a slightly nutty and sweet flavour, making it an excellent choice for various baked goods.

Its unique gluten structure is often easier to digest for some people, although it still contains gluten. Additionally, einkorn is more resilient in cultivation, thriving in poorer soils and harsher climates, making it a sustainable option even though it’s the most expensive grain I’ve seen on the market.

What is an Ancient Grain?

An ancient grain refers to a variety of grain that has remained largely unchanged over thousands of years. Other examples include, emmer, einkorn, kamut, quinoa, teff, and amaranth. These grains are prized for their lack of modification and hybridization, preserving their original nutritional properties and characteristics.

Where To Source Einkorn Flour

Einkorn is one of the more difficult flours to source. If you’re living in a city, you can mostly likely find a bakery or fancy grocery store that sells fresh-milled einkorn flour. If you’re living in the country and you can source whole grains, you may want to consider milling your own einkorn flour. You can start without making a large investment by using a powerful coffee grinder or blender that you already own. A step up would be purchasing a KitchenAid grain mill attachment.

What You’ll Need For Einkorn Apple Crisp

Materials

Ingredients

  • Sugar: I use brown sugar in this recipe for deeper flavour and moisture content but you can use whichever sugar you have on had. Avoid artificial or sugar-free products.
  • Einkorn Flour: I’ll be using einkorn flour in this recipe but you can use whichever whole-grain flour interests you. Because this recipe doesn’t require any kind of rise, the different characteristics of the grains won’t have much of an impact on the final product.
  • Oats: I use sprouted rolled oats for this recipe but you can use any rolled oat. Avoid quick oats and steel cut oats.
  • Salt: I use good ol’ pink Himalayan sea salt but any salt will do for this recipe.
  • Nutmeg: I use ground nutmeg for this recipe but I’m sure grating fresh nutmeg would take this crisp to another level.
  • Cinnamon: Ground cinnamon is perfect the way it is.
  • Ginger: Dried and ground ginger is my preference but you can use fresh and grated if you love ginger!
  • Vanilla Extract: Always.
  • Lemon Juice: To keep apples from browning and to cut sweetness.
  • Butter: Cubed and slightly colder than room temperature is perfect.
  • Chopped Apple: I used Granny Smith apples for this recipe but you can use any apple you have on hand. I’m sure there is a difference between how different apples bake but I say an apples an apple, they’ll all be good. Maybe the crispier the apple, the better it will bake.

Step-by-Step Instructions

1. Prepare for Baking

Preheat your oven to 350°F and lightly grease your baking dish with butter or coconut oil.

2. Craft the Einkorn Crumble

In a medium mixing bowl, combine the sugar, einkorn flour, salt, cinnamon, nutmeg, and oats. Add the cubed butter and use your hands to work it into the dry ingredients until a pebble-like crumble forms. Set aside.

3. Season the Apples

Place your chopped apples into a separate bowl. Toss with a splash of vanilla and lemon juice. Sprinkle in the einkorn flour, sugar, nutmeg, cinnamon, ginger, and salt. Stir with a wooden spoon until every apple slice is evenly coated in the spiced mixture.

4. Assemble and Bake

Transfer the spiced apples into your prepared baking dish. Top generously with the crumble mixture, spreading it to the edges. Bake for 30–45 minutes, or until the fruit is bubbling and the topping has turned a beautiful golden brown.

5. Serve and Enjoy

Remove from the oven and let it sit for a few minutes—this allows the juices to thicken. Serve warm with a scoop of vanilla ice cream, a dollop of yogurt, or even a splash of heavy cream.

Crumble

  • 2/3 cup sugar 125g
  • 1 cup einkorn flour 125g
  • 1/2 cup butter 95g
  • 1¼ cups rolled oats 125g
  • 1/2 tsp salt
  • 1/2 tsp nutmeg
  • 1/2 tsp cinnamon

Apple Mixture

  • 5-6 large apples diced
  • 3 tbsp einkorn flour
  • 1/4 cup sugar
  • 1 tsp cinnamon
  • ¼ tsp ground nutmeg
  • ¼ tsp ground ginger
  • ¼ tsp salt
  • ½ tsp vanilla extract
  • juice of half a lemon
