After much trial and error, this has become my go-to spelt chocolate chip cookie recipe. It’s perfectly crisp on the edges, yet soft and chewy in the middle—my ideal cookie.
Browned butter or creamed butter? Low sugar or more sugar? A blend of flours or all spelt? The many variables of a cookie can make it difficult to perfect, but this recipe delivers everything you want in a cookie: crisp, soft, chewy, sweet, salty, and packed with the nutty depth of spelt flour.
I love baking with spelt because of its rich, nutty flavor and unique nutritional value. As a soft, low-gluten grain, it’s one of the easiest whole grains to incorporate into baked goods, making it a fantastic choice for cookies that are both delicious and wholesome.
What is Spelt?
Spelt is one of my all-time favourite grains. It is versatile, oh so tasty, easy to mill, and nutritionally superior. It is one of the most popular ancient grains, both for its flavour and nutritional value. It has been cultivated and used as the staff of life for thousands of years.
Spelt is a great substitute for white flour in baked goods. It is easy to swap out some or all of the white flour for a finely milled spelt flour. With bread, however, its unique gluten structure shows its colours. Strong gluten development is required to have a soft and airy loaf, using too much spelt in a bread recipe can lead to a dense and possibly dry loaf. Spelt bread is one of my favourites though! The deep nutty flavour is like nothing else and its high protein content makes it very satiating.
Health Benefits of Spelt
Spelt is a nutrient-dense ancient grain that offers a variety of essential vitamins and minerals that support overall health. Its high fibre content aids digestion, regulates blood sugar and supports a robust microbiome. A healthy microbiome is essential for an insane amount of bodily functions.
Spelt contains more protein than modern wheat. However, not gluten protein which is something people seem to be sensitive to. I don’t know where I stand with the gluten debate, all I know is we’ve been eating gluten to sustain life since the dawn of time and only recently has there been a significant rise in “gluten sensitivities”. It seems to me that it’s a symptom of modern industrial farming practices rather than the staff of life, but what do I know.
Spelt is rich in B vitamins such as niacin, thiamine, and riboflavin. These vitamins are crucial for energy production, preventing iron deficiency, and maintaining a healthy nervous system. It also provides a significant amount of magnesium, a mineral that most people are deficient in. Magnesium is essential for so many bodily functions including energy production, muscle and nerve function, and blood sugar regulation.

Where To Source Fresh-Milled Whole-Grain Flour
If you’re living in a city, you can mostly likely find a bakery or fancy grocery store that sells fresh-milled whole-grain flour. If you’re living in the country and you can source whole-grains, you may want to consider milling your own flour. You can start without making a large investment by using a powerful coffee grinder or blender that you already own. A step up would be purchasing a KitchenAid grain mill attachment.

What You’ll Need To Make Perfect Spelt Chocolate Chip Cookies
Materials
- Medium-sized mixing bowl: For mixing your ingredients together.
- Silicone spatula: For mixing your ingredients together.
- Hand mixer or stand mixer: For whipping butter and sugar.
- Kitchen scale or measuring cups and spoons: For measuring out your ingredients.
- Tablespoon cookie scoop: For scooping cookies. You can also eyeball it and use a spoon.
- Baking Sheet: For baking your cookies on. I line mine out of habit but cookies have so much fat in them they likely won’t stick to an unlined baking sheet.
Ingredients
Butter: I use all butter but you can do a blend of half butter with an alternative fat like lard or coconut oil, just make sure it is at room temperature.
Sugar: Brown sugar is best as it adds a rich flavour and chewy texture. But you can use white sugar as well and add a teaspoon of molasses, if you wish.
Vanilla: I use homemade vanilla but any vanilla is wonderful.
Eggs: Any whole egg will be good.
Spelt Flour: I used freshly milled spelt flour for this recipe but you can use any kind. Sprouted spelt flour is a great option!
Baking Soda: Regular multi-use baking soda.
Salt: I used pink Himalayan sea salt but any salt is good. I also sprinkled a little flakey Maldon salt on top but that’s completely optional.
Chocolate Chips or Bakers Chocolate: I like chopping up Bakers chocolate but chocolate chips are good too.

How To Make Perfect Spelt Chocolate Chip Cookies
Cream the Butter & Sugar: Measure out room-temperature butter and whip until smooth. Add sugar and mix until light and fluffy.
Add Wet Ingredients: Crack in the eggs, pour in the vanilla, and whip until creamy.
Mix in Dry Ingredients: Gently fold in the dry ingredients until just combined. Stir in the chocolate chunks.
Chill the Dough: Cover and refrigerate for at least 1 hour.
Preheat & Prep: Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper or silicone mats.
Scoop & Shape: Use a tablespoon cookie scoop to portion the dough, rolling into balls. Place 6 per tray, spacing them apart.
Bake: Bake for 10-15 minutes, until golden on the edges and set in the middle.
Cool & Enjoy: Let the cookies sit on the tray for a few minutes before transferring them to a cooling rack.
Notes
I prefer to bake one tray at a time, I find it’s a more even bake in my oven but do whatever works for you!

- 1 Tbsp Vanilla 15g
- 1¾ Spelt Flour 400g
- 1 tsp Baking Soda
- 1 tsp Salt
- 1 Cup Chocolate Chunks 200g
Instructions
- Cream the Butter & Sugar: Measure out room-temperature butter and whip until smooth. Add sugar and mix until light and fluffy.
- Add Wet Ingredients: Crack in the eggs, pour in the vanilla, and whip until creamy.
- Mix in Dry Ingredients: Gently fold in the dry ingredients until just combined. Stir in the chocolate chunks.
- Chill the Dough: Cover and refrigerate for at least 1 hour.
- Preheat & Prep: Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper or silicone mats.
- Scoop & Shape: Use a tablespoon cookie scoop to portion the dough, rolling into balls. Place 6 per tray, spacing them apart.
