Ingredients  

  • 1 Cup Butter 225g (room temperature)
  • 2 Cups Brown Sugar 375g
  • 2 Eggs
  • 1 Tbsp Vanilla 15g
  • Spelt Flour 400g
  • 1 tsp Baking Soda
  • 1 tsp Salt
  • 1 Cup Chocolate Chunks 200g

Instructions 

  1. Cream the Butter & Sugar: Measure out room-temperature butter and whip until smooth. Add sugar and mix until light and fluffy.
  2. Add Wet Ingredients: Crack in the eggs, pour in the vanilla, and whip until creamy.
  3. Mix in Dry Ingredients: Gently fold in the dry ingredients until just combined. Stir in the chocolate chunks.
  4. Chill the Dough: Cover and refrigerate for at least 1 hour.
  5. Preheat & Prep: Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper or silicone mats.
  6. Scoop & Shape: Use a tablespoon cookie scoop to portion the dough, rolling into balls. Place 6 per tray, spacing them apart.
  7. Bake: Bake for 10-15 minutes, until golden on the edges and set in the middle.
  8. Cool & Enjoy: Let the cookies sit on the tray for a few minutes before transferring them to a cooling rack.

Notes

If you put your dough in the fridge overnight, let it come to room-temperature before scooping. It will be easier that way.
